Oooh, that sounds good! My in-laws usually make the stuffing (one regular and one with oysters), and we don't stuff our turkeys anymore, but we have in the past. (Actually, I personally love to use cooking bags...) I have made a simple stuffing recipe a few times that I found online somewhere at some point, and people seemed to enjoy it. I put it in the spoiler below. My sister and I one time made two stuffing recipes beforehand and picked the one we liked best, ha. Ingredients: 2 cups bread crumbs (cubed, and let them dry out before using them), 1 cup unsalted butter, 3/4 cup minced onion, 1 1/2 cups chopped celery, 1 cup mushrooms (optional), 2 tsp. salt, 1 tsp. pepper, 1 tbl. ground sage and some no-salt added chicken broth.
Directions: Melt the butter in a skillet and cook the onion and celery (and mushrooms if you used them) until the onion is soft. Add the salt, pepper and sage and cook for three minutes. Put the cubed bread crumbs in a large bowl and add 1/4 cup of the butter/onion/celery mixture at a time, tossing well after each addition, until all of the butter/onion/celery mixture is added to the bread crumbs. For the chicken broth, this is to your taste. If you want a drier stuffing, add little to almost none of the broth. If you would like it to be more moist, add in just enough to make sure the bread crumbs are moistened.
As for the turkey, I'm sure you've read all about tying the legs together, basting, the thermometer, etc., but if you don't mind, let me add my two cents of things I've learned along the way that people don't really tell you enough. Add a little salt and pepper into the cavity before you stuff. Press it in there, but if you press it too too hard, your stuffing will be a big lump. Make sure you butter (and I like to add a little olive oil as well) all over the top of the turkey to make it brown, but you can put an aluminum foil tent over the top of it once it gets brown enough for you but it still has time to cook. This will keep it from getting too done on the top. Good luck and enjoy!

My oven doesn't work. It's been a while since I used it, how can it just not work all of a sudden?! The display works, it says "stop" and that is all lol. So I cooked the brussel sprouts in a frying pan in stead. I've always boiled them but read the other day that they're so much better fried and wow they are! Left over ham, the sprouts, potato and apple sauce. Yum.

I sautee brussel sprouts in some olive oil and garlic. Bacon if I have it (so good). We made a 7 lb ham for just the two of us. I've had ham for breakfast and lunch today and it may be awhile until I want it again!

My youngest son made lentil soup last night, and I made some biscuits (the bread kind for our peeps across the ocean), and it was so good.

So, yes, the turkey was good. I took the ‘best’ parts of both receipes. And I covered the turkey in truffle mayonnaise.
We had a small turkey, but too big for 4,5 persons. But hey, hubby always loves a lot of meat. ;-)
